Marije Vogelzang runs her own food-design laboratory, Proef. She is inspired by everything that surrounds the act of eating – from the stories and rituals surrounding food preparation to the emotional impact of the texture and color of specific foods. The result? Edible art installations that are at once provocative and intimate.

that’s interesting when she says how you might want to taste some Amsterdam tap water with some things and some Utrecht tap water with other things. It reminds me of this article from ediblegeography.com called "Bones & Bagel Water" (http://www.ediblegeography.com/bones-and-bagel-water/) where the owner of a NY bagel shop was trying to demonstrate how to make bagels in Washington D.C. except dough wouldnt rise with that water. "Only the intervention of the NYC Department of Environmental Protection, which airlifted in twenty gallons of the finest city tap water, averted a ‘mediocre bread roll with a hole in the middle’ disaster."

I just watched this again. The green line/bread project in Lebanon is brilliant, "eating away negative memories of the green line and sharing in positive memories of childhood." The WW2 cooking at the Rotterdam museum was also clever (cooking WW2 food that hadnt been cooked in 60 years and issuing it as ‘rations’) and so was the healthy food cooked for the students in the The Bronx (showing how colors are associated with certain emotions instead of focusing on the nutritional value the food). Clever. Food wave was also cool. I wish I had visited Proef place when I was in the Netherlands this summer. PS – did anyone besides me wonder what J.Lo was doing in the tablecloth project about 9 min into the clip? haha
